Stuffed Mushrooms

INGREDIENTS

  • 1/4 cup fresh chopped parsley
  • 1/2 cup panko breadcrumbs
  • 1 clove fresh garlic
  • 1/4 cup grated cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • olive oil

METHOD

  1. Remove the stems of the mushrooms by simply pushing the until they snap out.  You will need this “hole” to put the stuffing.
  2. Save the stems.
  3. Rinse and/or brush off all mushrooms to clean.
  4. Mix all ingredients well including the stems, I like to use a food processor in this case.
  5. Stuff the mushrooms with the mixture
  6. Place in a glass oven dish with butter rubbed on the bottom so they mushrooms do not stick
  7. Drizzle the mushrooms with olive oil.
  8. Add half cup of dry white wine into the glass dish (I skipped this step because I forgot the white wine, but as you see above they came out fine)
  9. Cover and bake in oven at 425F for 20 minutes.
