Cavatelli & Broccoli

Another old school Italian classic is the cavatelli and broccoli. It is vegan friendly, and is very simple, healthy, nutritious, and delicious.  Cavatelli differs from most pastas because one of its ingredients is potatoes.  They are usually frozen, but you can buy them fresh.

INGREDIENTS

  • 1 large broccoli crown, about 1 pound
  • 1/2 teaspoon Better than Bullion chicken broth OR 1/4 cup rich chicken broth
  • 1/2 teaspoon Better than Bullion garlic broth OR 1/4 cup rich garlic/vegetable broth
  • 3 large cloves garlic
  • 1/2 cup fresh grated parmesan cheese
  • 1 pinch red pepper flakes
  • 1/2 teaspoon salt & pepper (or to taste)
  • Olive oil

METHOD:

  1. In a sauce pan, add olive oil, garlic, red pepper flakes and simmer till fragrant, about 5-10 minutes
  2. Bring a pot of salted water to a boil with the broccoli crown.
  3. Cook until the broccoli turns deep green, about 5-10 minutes.
  4. Remove the broccoli, allow to cool, cut the hard stems.
  5. In the same pot, add the frozen cavatelli and cook for 7 minutes and/or to package directions
  6. Add the chicken and garlic broth to the sauce pan.
  7. Once the cavatelli is cooked, drain and add to the sauce pan, stir thoroughly and cook another 5 minutes.
  8. Turn heat to low and/or off, add in grated cheese.
