Stuffed Mushrooms
INGREDIENTS
- 1/4 cup fresh chopped parsley
- 1/2 cup panko breadcrumbs
- 1 clove fresh garlic
- 1/4 cup grated cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- olive oil
METHOD
- Remove the stems of the mushrooms by simply pushing the until they snap out. You will need this “hole” to put the stuffing.
- Save the stems.
- Rinse and/or brush off all mushrooms to clean.
- Mix all ingredients well including the stems, I like to use a food processor in this case.
- Stuff the mushrooms with the mixture
- Place in a glass oven dish with butter rubbed on the bottom so they mushrooms do not stick
- Drizzle the mushrooms with olive oil.
- Add half cup of dry white wine into the glass dish (I skipped this step because I forgot the white wine, but as you see above they came out fine)
- Cover and bake in oven at 425F for 20 minutes.
