Italian Meatloaf

This is my own invention.  It simply derived from leftover feta cheese I did not want to throw out, and an abundance of sun-dried tomatoes.

  • 1/2 cup finely chopped onions (about 1 small-medium onion)


  • Heat oven to 400F
  • Mix all ingredients together well
  • Wrap in parchment paper and cook for 30 minutes on a wire rack
  • Remove parchment and cook unwrapped for the final 15 minutes
  • Allow to cool 10 minutes
  • Slice & Serve with brown gravy
