Meatballs (polpettes)


  • 1 pound Ground beef, pork, lamb (combined)
  • 1/4 cup (1 small onion) chopped fine
  • 3/4 cup fresh breadcrumbs OR 1 cup dried/fine store bought breadcrumbs
  • 1/4 cup parsley
  • 1/3 cup grated cheese
  • 1 Egg
  • Garlic to taste (1-2 cloves shredded fine)
  • 1 small pinch red pepper flakes (optional)
  • 1 teaspoon each of Salt & Pepper (or to taste)

Set oven to 400F and cook for at least 20-25 minutes on one side, flip them, and allow to cook another 10 minutes and/or until deep brown, NOT black. Once you take them out of the muffin tin, place them on a plate lined with clean paper towels to drain that extra grease you really don’t need in your sauce (or gravy).
