Manicotti
INGREDIENTS
- Ricotta
- Parsley
- Egg
- Salt
- Pepper
- Grated Cheese
- Mozzarella
First: Make a simple tomato sauce of your choice.
Next: Make the crepes. The recipe can be found here.
Ricotta: Combine all the ingredients in a large bowl except the mozzarella.
Manicotti: Fill the crepes with about 1-2 tablespoons of the ricotta mixture. I like to use a spatula and spread it evenly, then form it into a “C” type shape, overlapping the ends of the crepe/pancake. Top with sauce, then mozzarella cheese. Cover with tin foil. Bake at 400F for 20 minutes covered, then another 20 minutes uncovered and/or until cheese is melted to your desire.
