Roasted Herb Potatoes
This is a very easy dish, it just takes time. Simply get the potatoes of your choice, and cut them all into smaller pieces about 1.5″. Roast in the oven until tender and/or brown to your liking. Usually about 40 minutes or so. The dressing is simple, olive oil and whatever, herbs you like. Here is how I like them listed in the ingredients below.
INGREDIENTS
1/4 cup olive oil PLUS 1/4 teaspoon of each should evenly coat about 1.5 pounds of potatoes cut:
- Salt
- Pepper
- Thyme
- Oregano
- Rosemary
METHOD:
- Cut potatoes into equal sizes
- Add all ingredients into a small bowl to mix
- Coat all the potatoes with the mixture, toss to ensure they are all covered
- Cook at 375F for approximately 45 minutes and/or until they are tender or browned to the color of your liking
